I can't wait to read more about the Scottish and Swedish vegan fare you encountered. I'm hoping to make a trip to Scotland and Finland this summer and so will be taking notes on restaurants and such. Ah, and I love lamb's lettuce. I've seen it sold here in Canada as Mache. (I'm pretty sure there's an accent circomflexe over the a). Delicious.
