November, it seems, is not a great month for me to try posting more regularly. I really should be in bed by now, because I am working at 2am (!) this week to bake enough pies for the masses at the co-op. I was hoping to share a recipe for roasted brussels sprouts with cranberries with you today, but sometimes trying to measure things accurately causes me to lose the fun and intuitive nature of how I cook, and that was the case today. So you get a picture instead of a recipe (which was still edible, just not publishable). Also enjoyed was a big bowl of blended frozen bananas, peaches, goji berries, raisins and vanilla, because I just can’t get cold enough in the middle of two winter storms. Actually, I’m cuddled under a blanket as I type this.
Thanksgiving is likely to be a rather subdued event for me this year. But if you’re in need of some holiday ideas, you might try a hand at some easy peasy Raw Cranberry Relish, or perhaps a healthy SuperGreen Cranberry Orange Salad in case you missed my last post, or if you’re really struggling with a main course, perhaps some Vegan Haggis! And if you’re free the day after Thangsgiving, why not try some savory-esque Raggmunkar (Swedish potato pancakes) or welcome the arrival of the horrid xmas shopping season with some Gluten-Free Gingerbread Buckwheat Pancakes. See, this post isn’t all in vain after all!

My name is A-K and I started writing swell vegan as a way to learn and motivate myself about eating vegan food that is both delicious and (mostly) healthy.

Glad they are working now! I got nervous for a minute
Anything with gingerbread and pancakes in the title is something that needs to be in my mouth.
I’m so happy I searched for swedish vegan meatballs, because I found you! …And a really good recipe too, of course! I’ll put a link on my blog, that’s for sure!
Thanks Johanna! I’m excited to check your blog out as well
